Mash 70g of the strawberries in a small bowl with the back of a fork. Then add the cream cheese and vanilla and mix to form a thick paste. Add more cheese if the mixture is too runny. It needs to hold its shape.
Unroll the puff pastry and using a cooke cutter or a sharp knife, cut into heart shops, or alternatively into small squares. With the point of a knife or a smaller cookie cutter, indent a 1cm border around the inside of each pastry, ensuring not to cut all the way through, this helps the pastry rise well. Transfer to a non stick baking tray.
Spoon the cream cheese mixture on the pastries keeping inside the border, top with the remaining strawberries thinly sliced then egg wash the exposed pastry. (Try not to let the egg touch the cut sides of each pastry as this stops a nice rise and flake).
Bake at 200 degrees fan for around 10-15 minutes or until the pastry has puffed up and golden. You can dust the tops with a little icing sugar if you wish but they are really sweet enough without.
