Black Bean Fritter

These delicious soft fritters are packed full of nutritious black beans and flavoured mildly with curry spices.

Ingredients:

  • 400g tin of black beans, drained and rinsed
  • 2 eggs (Can sub for 2 tbsp of ground flax and 5 extra tbsp of your choice of milk)
  • 85g plain flour (*Gluten free flour)
  • A heaped tsp of baking powder
  • 1 tsp of smoked paprika
  • 1 tsp of mild curry powder
  • A generous grinding of black pepper
  • 85ml milk (cows or plant based)

Method:

Add the beans to a bowl and roughly mash with the back of a fork.

Add the rest of the ingredients and mix well. Fry tablespoon amounts of the mixture in a medium hot pan, with a little drizzle of oil. Cook for a couple of minutes on each side until golden on the outside and fully cooked all the way through.

Suitable from 6 months – cut the fritters into strips before serving to baby. Store in the fridge for a couple of days or freeze for up to 3 months.
