Baby Meatloaf

A good honest family meal, made suitable for little ones to enjoy too.

Ingredients:

  • 500g of lean beef mince
  • 1 medium egg (can sub for chia or flax egg*)
  • 4 heaped tbsp of breadcrumbs* (plus extra for on top)
  • 1 crushed garlic clove
  • 1/2 tsp mustard powder
  • 1 tsp mixed dried herbs
  • 2 tsp smoked paprika
  • Good grinding of black pepper
  • 2 tbsp tomato puree concentrate

Method:

Mix all of the ingredients together in a large bowl, using your hands to squish and combine well.

Tightly compact the mixture into a 2lb loaf tin or similar size high sided baking tray, which has been greased well.

Top with more breadcrumbs, black pepper and a drizzle of olive oil.

Bake for approx 1 hour and 10 mins to 1 hr 30 mins at 180d/350f until the juices are running clear and the meat has fully cooked.

To make the potatoes, cut slits into each potato, drizzle with oil and bake for the same amount of time as the meatloaf.

Suitable from 6 months. Cut into fingers strips to serve Freezable for up to 3 months. Defrost and reheat in the oven till piping hot. Leftovers are delicious eaten cold in a sandwich to up your lunch box game.
