Breakfast Burrito with homemade baked beans

Fill a wrap with delicious breakfast treats to turn the everyday into something new. Check out our yummy recipe for easy homemade baked beans too!

Ingredients:

  • 4 eggs
  • 2 tortilla wraps*
  • 1 avocado
  • Approx 30g of cheese (or DF*)

For the baked beans:

  • 1 tin of haricot beans – don’t drain the water
  • Tbsp of tomato puree
  • Tsp of smoked paprika
  • 1/4 of tsp of mixed dried herbs
  • Dash of Worcestershire sauce (optional)
  • Black pepper

Method:

Add all the baked beans ingredients to a saucepan including the bean water. (Make sure there’s no added salt to the beans. Stir and let it simmer for 8-10 minutes till the beans are soft.

Whisk your eggs. Add a small knob of butter to a frying pan, and once melted, add the eggs. Grab a good firm silicone spatula, and start to gently move the cooked egg away from the bottom of the pan, keep moving the egg around till it’s all cooked, but try to be gentle so you keep the eggs in large pieces. It should take no longer than 3-4 minutes for the eggs to cook.

To make the burrito: add a little pile of eggs to the centre of a tortilla wrap, top with grated cheese, a spoonful of baked beans and then a couple of slices of avo. Fold in the two sides then roll the burrito up leaving the seam underneath so it doesn’t unravel.

Suitable from 6 months. You may need to deconstruct the burrito for young babies and cut the wrap into strips. Half a burrito is a large enough portion. You can make up a burrito, wrap in cling film or foil and freeze. To eat again, unwrap and microwave for 2-2.5 minutes till piping hot inside.
