Cheesy Kale Waffle

Delicious soft waffles packed with greens, suitable for the whole family from 6 months.

Ingredients:

  • 4 blocks of store bought chopped frozen kale or spinach
  • 115g self raising flour*
  • 1 tsp baking powder*
  • 2 large eggs * (Replace with 2 chia eggs)
  • 80g of grated cheddar** (Use dairy free alternative)
  • 35ml of milk** (Use dairy free alternative)

Method:

Add the kale cubes to a jug with 1tbsp of water, cover and heat n the microwave for 3 minutes.

Pre-heat a waffle maker or frying pan.

Add all the ingredients to a bowl (including the little bit of kale water) and mix till just combined, avoid over mixing.

In batches, spoon into hot waffle maker or frying pan and cook till golden brown on the outside. And the repeat till the mixture is used it.

Suitable from 6 months, cut into strips to serve. Store in the fridge for 2 days and freeze for up to 3 months. Pop in the toaster for 2 days or freeze for up to 3 months. Pop in the toaster, oven or microwave to reheat from frozen.
