Baby Mince Pies

No added sugar, baby friendly, sweet raisin, cranberry and apple pies, flavoured with cinnamon and mixed spice! The most delicious comforting festive treat.

Ingredients:

  • 1 egg for glazing
  • Tsp of demerara for decoration (optional)

Pastry:

  • 240g of plain flour*
  • 110g cubed chilled unsalted butter*
  • 1 large egg

For the filling:

  • The juice of one large orange
  • 100g of seedless raisins
  • 100g of dried cranberries
  • 1 eating apple, peeled, cored and cut into 1cm cubes
  • 1 tsp of ground cinnamon
  • 1 tsp of mixed spice

Method:

Add the butter & flour to a food processor, whizz till it resembles fine breadcrumbs, then whisk the egg and gradually add little water to help the fruit swell, but not too much, you don’t want lots of sauce. Remove from the heat to cool a little.

Take the dough from the fridge, roll out till 3mm thick, cut using a circle cutter bigger than each muffin hole & add each pastry disc to a greased tray. Spoon in the filling, then top with a pastry shape.

Brush with beaten egg & sprinkle with a little sugar (optional).

Bake for 15-20 mins at 180d/360f till the pastry has turned golden on top.
