Broccoli Bites

Give these yummy, light and airy morsels a go for lunch today, they taste similar to a cheese scone with a hint of broccoli for added goodness.

Ingredients:

  • 130g raw broccoli
  • 150g self raising flour*
  • 1 tsp baking powder*
  • 2 eggs (can replace for 2 flax eggs: 2 tbsp of ground flax mixed with 5 tbsp of warm water)
  • Half a teaspoon of smoked paprika
  • Half a teaspoon of mustard powder
  • 70g of grated cheddar cheese plus extra for on top (*or vegan cheese)
  • 150g of milk (cows or plant based)

Method:

Preheat a fan assisted oven to 180d/350f.

Cut the broccoli into small pieces, place in a microwaveable bowl with a dash of water, cover and cook for 3 minutes. Alternatively steam for 5 minutes on the hob.

Meanwhile add all the other ingredients to a bowl, then add the broccoli once cooked and drained. Give it a good mix. Spoon into a greased muffin tin, I used a mini muffin mould, but you can use a regular 12 hole muffin tin.

Sprinkle the top of each muffin with a little bit of extra cheese and bake for 12-15 minutes until the bites have risen nicely and are golden on top. (If using a regular 12 hole tin, you may need to cook for a few more minutes.)
