Broccoli Fritters

These deliciously soft and cheesy broccoli fritters will be a total winner with the whole family!

Ingredients:

  • Half a head of raw broccoli, grated
  • 100g self raising flour*(Gluten free alternative)
  • 100ml of milk (cows or dairy free)
  • 2 eggs (or sub for chia eggs)
  • 1 tsp of baking powder
  • 40g of grated cheddar cheese
  • A little black pepper

Method:

Preheat your oven to fan assisted 180d/360f and line a large baking sheet with non stick baking paper. (Exact tray size doesn’t really matter.)

Grate the broccoli then add all the ingredients to a bowl and mix well. Pour onto the lined baking tray and use a spatula to evenly spread the mixture to around 1cm in thickness. Ensure it is the same thickness all over without a hump in the middle.

Bake for 15-20 minutes until it’s turned golden on-top and not too gooey inside. It should be a little soft but it shouldn’t have any raw mixture inside.

Cut into strips and serve with plain yoghurt for dipping.

Prep 5 minutes Cook 15-20 minutes – you can also fry in a pan to make the traditional patty shape. Suitable from 6 months. Cut into strips before serving. Will keep in the fridge for 2 days or freeze for up to 3 months with baking powder between each slice to prevent sticking.
