Carrot Cake Porridge

Just imagine cake for breakfast! Ready in less than 10 minutes – this porridge seriously tastes like carrot cake without any of the guilt!

Ingredients:

  • 3 medium carrots
  • 1 mug full of porridge oats*
  • 2 mug fulls of your choice of milk*
  • 2 teaspoons of ground cinnamon
  • Frozen or fresh berries and passion fruit for serving (optional)

*Or a gluten free option

Method:

Wash and grate your carrots. Add to a saucepan along with a mug full of porridge oats and then used the same mug to measure to mugs of milk. Add the cinnamon and stir for 4-5 minutes on a medium heat till thickened to your desired consistency.

Pour into your serving bowls and top with the fruit (the heat of the porridge helps defrost the fruit if using frozen berries).

Suitable from 6 months – For young babies use fresh fruit to garnish rather than frozen. Any left over porridge freezes really well for up to 3 months.Freeze in portions and defrost at room temperature, in the microwave or in a saucepan with an extra splash of milk.
