Place spinach in a sieve over the sink and pour oven boiling water out the kettle to wilt, using the back of a spoon squeeze out all the liquid.
Add into a food processor along with the rest of the ingredients (except the tomatoes) and whizz up until smooth.
Spoon into a silicone mini muffin tray or a greased metal one. (You can use any size muffin tray, just adjust the cooking times if using larger). Top with a halved or quartered cherry tomato (optional) and bake at 180 degrees for 10-15 minutes.
Suitable from 6 months old. The bites will last for up to three days in the fridge and they can be reheated in the microwave or oven before serving.
